Mediterranean Harissa Omelette

A delightful breakfast or brunch choice, particularly for those that like rich flavour. Add some feta cheese or gruyere if you like your omelettes cheesy.

Mediterranean Harissa Omelette

Servings: 4

Cooking time: 15 minutes


4 Eggs (whisked)
2 Spring onion stalks
3 cloves garlic
1 tbsp Harissa Spice
3 tbsp olive oil
½ cup of Kalamata olives
4 large sun-dried tomatoes
½ tsp salt and pepper



    1. Heat the olive oil in a saucepan on medium heat;
    2. Crush garlic cloves, chop up the spring onion and add to the pan;
    3. Prepare the eggs whisking until mixed well;
    4. When the aroma of the garlic and onion starts to infuse the oil (2 minutes), add the harissa spice and fry for 1 minute;
    5. Add the eggs into the pan and toss in the olives and sun-dried tomato;
    6. Keep the heat on medium and cover the saucepan;
    7. Remove the eggs and serve when ready (approx 7 minutes);
    8. Season with salt and pepper as required.
