  • This signature sauce of Mexico is known for including a long list of ingredients from chocolate to ground almonds and pistachios. Hailing from the state of Puebla, there are six versions of the dish, but the traditional mole poblano is a thick, brown, slightly sweet and spicy sauce. Legend has it that mole first appeared in the 16th-century when nuns had to frantically prepare a meal for the visiting Archbishop. Having very little on hand, they combined ingredients like old bread, nuts, chocolate, and spices, roasting and grinding until the sauce was created. It was a hit, and now mole is served at celebrations and holidays across Mexico.
