If you like Halloumi cheese this fragrant nutty salad is for you. The cumin and chilli from the harissa will give a kick to the halloumi.
Green Halloumi Salad
Cooking time:40 minutes
1 large head lettuce, of choice ½ cucumber, thinly sliced ½ avocado, finely sliced Handful pine nuts, toasted 1 packet halloumi, sliced into pieces 1 small handful chives, chopped Black peppercorns, freshly ground Micro greens for garnish
Blend the ingredients for the pesto together in a high speed food processor until smooth and set aside.
Heat a nonstick pan over a high heat. Place the halloumi flat side down in the pan. Give it a couple of minutes before flipping - there should be a nice caramelized crunchy surface to the halloumi. Adjust the heat as necessary and continue flipping until all the halloumi is cooked.
Toss and assemble the vegetables and herbs for the salad on a large serving plate. Pour the dressing over the salad.
Arrange the halloumi on the plate and finish with toasted pine nuts, and micro greens. Serve while the halloumi is warm.
