Slow Cooked Tender Crispy Chicken

Crispy tender slow cooked chicken with zest and zing chicken rub

If you have some time on your hands, these's nothing quite like the tenderness of a slow cooked chicken. With this recipe, your chicken will be ready in 2.5 hours, the best part of which is the rich flavour that comes from our Chicken Rub and this thick, savoury marinade.

Slow Cooked Tender Crispy Chicken

Servings: 6

Cooking time: 2.5 hours


1 whole chicken
4 large garlic cloves
0.5 cup of cherry tomatoes or heirloom tomatoes if in season
4 tbsp olive oil
2 tsp of Chicken Rub
0.5 cup of Kalamata olives
2 trimmed rosemary sprigs



  1. Rinse the chicken and pat dry;
  2. Preheat the oven to 150 degrees C. 
  3. Add all of the remaining ingredients into a blender and blitz until you have a nice thick marinade (see the photo below);
  4. Rub the marinade all over the chicken and place it in a deep oven dish uncovered. Cook the chicken in the oven for 2.5 hours at 150 deg C.
  5. Halfway through the cooking time, turn the chicken over and toss it around in the pan to pick up some of the sauce;
  6. Remove the chicken from the oven and carve it into tender pieces. Serve it with some of the oily, juicy marinade from the oven dish.
